Summer desserts need to be fast and easy! Now that the peaches are starting to come into season, I thought I’d share one of my favorite summer recipes. QEND! Quick, Easy, Nutritious and Delicious!
Crust Ingredients:
- 3 cups pecans
- 1 vanilla bean, scraped
- ¾ teaspoon sea salt
- ¾ cup pitted dates (soaked in water about 15 minutes)
Syrup:
- ¾ cup pitted dates (soaked)
- 3 Tablespoons coconut oil
- ½ vanilla bean
- 2/3 cup water, as needed
Filling:
5-6 large ripe peaches, or more, sliced (skin on)
Note: Whole vanilla beans are incredibly flavorful. If you have to, substitute vanilla extract, but it’s not the same! Look for the whole vanilla beans in the spice rack at the health food store or a well stocked grocery store.
Directions:
To make the crust, process pecans, vanilla beans and salt into a powder in your food processor. Add ¾ cup pitted dates and process until mixed well. Sprinkle half of the crust onto the bottom of a pie dish and set aside. Don’t bother rinsing out the food processor; the leftover crumbs will add in with the syrup ingredients.
To make the syrup, process ¾ cup dates, oil, vanilla bean and water as needed to make a thick syrup. Set aside.
To make filling, slice the peaches and place in large bowl. Toss with the syrup. Spoon onto cobbler crust. Top with remaining crust. Serve immediately.

I am grateful I found your page. I was looking for a perfect summer dessert and this peach cobbler is just what I need. Besides peaches, what other fruits can I add for variety of flavors?
This dessert would be great with plums, blackberries, or even strawberries.
